These Vegan Banana Matcha Pancakes are so delicious, easy to make and using only a few ingredients you’ll have soft, sweet, matcha and banana flavoured pancakes loaded with antioxidants, making these the best healthy breakfast. They are sugar-free, gluten free, dairy-free and egg-free.
We are big fans of pancakes for breakfast here at Vegan Boards, so whenever the chance arises and we have a bit of extra time in the morning, Katia will usually make us a batch of pancakes. These matcha pancakes are a new favourite and they are loaded with antioxidants to get us started with the day in the right way. These banana matcha pancakes are super easy and simple to make and takes no more than 30 minutes to make (depending on how many pancakes you make!)
But with this recipe you’ll get 10 delicious pancakes, perfect for brunch or breakfast, or possibly even paired up with a delicious vanilla ice cream as dessert.

What is Matcha?
Matcha is a unique Japanese green tea made from dried tea leaves. Matcha, when translated, means “powdered tea”, which is precisely what it is. Green tea becomes matcha when you use the whole leaf of the tea leaves, which will be made into powder, whereas you, as the consumer, can then use that matcha powder, dissolve it in hot water and usually whisk it with a bamboo brush until it froths up. Matcha has a bitter taste and a vibrant green colour from the leaves’ high chlorophyll levels. It has been used for centuries in Japan and has taken over the world due to its health benefits.
What does Matcha taste like?
If you don’t particularly like matcha but would still like to incorporate it into your diet, these banana matcha pancakes will help you with that! Matcha does have a very distinct taste, and not everyone is a fan. But when matcha is paired with sweetness (such as these bananas), the flavour from matcha will be very mild. I always love to pair up my matcha recipes with a sweet ingredient because it makes them taste incredibly yummy.

Instructions For Banana Matcha Pancakes
- Chop up the bananas in a bowl.
- Mix all the dry ingredients into the bowl (flour, salt, baking powder)
- Add the milk to the dry ingredients and mix throughout.
- Once mixed, add the matcha powder to a separate bowl, dissolve in a tbsp of boiling water and mix thoroughly)
- Add the matcha and vanilla to the bowl and mix.
- Heat a pan over medium heat. Add plant butter to the pan.
- Pour the batter onto the pan for each pancake. Flip after bubbles form and the pancakes are golden brown.
- Repeat and enjoy!
How To Store Any Leftovers From This Recipe
The pancakes are best when enjoyed warm, but you can keep both leftover batter or the cooked pancakes for up to 3-5 days in the fridge.
