Mexican Charred Sweetcorn Spring Salad

This Mexican Charred Sweetcorn Spring Salad is the perfect combination of a light dish filled with sweet, spicy and smokey flavours and a delicious flavourful dressing sauce.

Mexican charred sweetcorn salad is my go-to recipe during the summer months. There’s nothing better than quickly stirring together a healthy salad on the hot summer days when you want to sit outside and enjoy the sun instead of spending too much time in the kitchen for a quick lunch.

Luckily, I’ve created the easiest and most delicious dish you can imagine that’ll be guaranteed to be devoured in no time! This salad recipe consists of sweetcorn, red pepper, tomatoes, jalapeños, onion, cucumber, coriander, lime juice and tabasco sauce (most of which we all already have at home in our fridge), so here’s an inexpensive dish you won’t even have to go shopping for!

When this dish is done right (and believe me, it is hard to mess up!), you should have a delicious spring dish, filled with colour and ready to be served straight away! You can enjoy this dish either as a stand-alone dish, a side dish, or a quick lunch box for work or a picnic!

Ingredients For Mexican Charred Sweetcorn Spring Salad

Ingredients salad:

  • Sweetcorn cobs
  • Red pepper
  • Tomatoes
  • Jalapeños

  • Tabasco sauce

Should I use fresh or frozen corn?

This Mexican charred sweetcorn salad will be delicious whether you use fresh sweetcorn, frozen corn or from a tin. Sweetcorn in itself is both healthy and delicious on its own but a bit bland on the flavour, so one way to add some flavour is to use a gas hob use a tong to hold the sweetcorn over the hub until all sides are marked with char. But if you don’t have a gas hob, you can easily use both tin corn and frozen corn for this recipe.

But with that being said, I am always one for using fresh ingredients, especially when the ingredients are in season, and nothing is more delicious than grilling fresh sweetcorn on a hob or a grill when it is summer.

This Mexican street corn salad is tasty with fresh corn or frozen corn! Sweet corn is already delicious, but grilling fresh cobs on a grill enhances their natural sweetness and infuses them with a slightly smoky flavour. I wouldn’t argue that fresh is best, secondly frozen corn and, at the very bottom, canned corn because there is a distinction in both freshness and flavour, and this dish is served best using fresh and in-season ingredients.

Instructions Mexican Charred Sweetcorn Spring Salad

Salad instructions:

  1. If you have a gas hob, use some tongs to hold the sweetcorn over the hob until you see all sides with char marks. You can also do this on a bbq or a dry, hot griddle pan if needed. 
  2. Once the sweetcorn has been charred, you can also place the pepper and the tomatoes over the flame until they are charred and blistered. Then place the pepper and tomatoes into some ice-cold water to remove the blackened skins. You can leave some of the char on them as it will add to the flavour. Then chop them both and add to a mixing bowl.
  3. Remove the kernels from the sweetcorn by slicing down the sides of them with a sharp knife. Then add this to the same mixing bowl. You’ll see the delicious charred morsels fall off the inedible core.
  4. You can now add the chopped onion, cucumber, jalapeños and coriander and mix them all.

Dressing instructions:

  1. Add all ingredients to a small bowl and mix thoroughly. The lime and oil will split, but this doesn’t matter 
  2. The dressing will make two servings, so add half to the salad and mix it all. Then store the rest of the dressing in the fridge for up to a week in a jar.

  • 1 Mixing Bowl (for salad)
  • 1 knife
  • 1 Chopping board
  • 1 small bowl (for dressing)

Ingredients

Salad

  • 2 sweetcorn cobs (shucked)
  • 1 large red pepper
  • 2 tomatoes
  • 2 tbsp jalapeños (finely chopped - use 1 finely chopped fresh jalapeño if you don’t like the jarred ones)
  • 1/2 red onion (finely diced)
  • 1/2 medium cucumber (chopped into small cubes)
  • 1 handful fresh coriander/cilantro (roughly chopped)

Dressing

  • 2 fresh limes (juiced)
  • 78 ml extra virgin olive
  • 1 tsp Tabasco sauce (or more to of you like it spicy)
  • 1 tsp salt
  • black pepper

Instructions
