Roasted New Potatoes With BBQ Pulled Jackfruit & Melted "Cheese"

Equipment

  • Pan
  • Sharp knife
  • Oven
  • Cup (for flattening the potatoes or other tool)
  • Fork
  • Baking tray

Ingredients

  • 2 tbsp apple cider vinegar
  • 4 tbsp ketchup
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp liquid smoke
  • 1 tbsp soy sauce
  • 1 tsp chilli powder
  • 1 tbsp light brown sugar
  • x new potatoes
  • 1 handful of rosemary

Instructions

  • Boil the new baby potatoes until soft and pre-heat oven to 200 degrees.
  • Once they're cooked, place them on a baking tray and use the bottom of a cup (or anything else that's flat) to crush down the potatoes slightly. (They should not fall apart and make sure to place each potato with enough space in between them)
  • Drizzle them with olive oil, salt, rosemary and whole garlic cloves.
  • Once the oven is ready, place the baking tray in the oven for 30 minutes. There is no need to move around the potatoes throughout the cooking time in the oven. You can give them longer if needed.
  • During the 30 minutes of baking time, take your jackfruit and use a fork to seperate and pull the jackfruit pieces. Once done, pan-fry the jackfruit pieces with the finely chopped onions and my homemade BBQ sauce from the recipe. (Read next step)
  • Sauce: Mix all of the ingredients from the list together (apple cider vinegar, ketchup, paprika, garlic onion, onion powder, liquid smoke, soy sauce, chilli powder and brown sugar)
  • Once everything is cooked and the sauce is made, just add the jackfruit on on top of they gooey crispy potatoes and then it's a match made in heaven!
  • Ready to serve and share with your family!
