This Vegan Matcha Overnight Oats are a super easy make-ahead breakfast you can prepare for days in advance and in batches to get all the health benefits from the beginning of your day thanks to the matcha green tea!

This recipe is a standard recipe for Katia to have in the mornings. Usually, she likes to have the warm soothing instant oats for breakfast, and that is probably why it took a while to get on board with the overnight oats. But now it is a favourite breakfast in our household!

What makes overnight oats so great is that it is super easy to put together, taste good, and it is super healthy! You’ll not only get incredible health benefits from the oats, but even more so from the chia seeds and matcha green tea that will certainly help you get ready to wake up and tackle the day!

This recipe isn’t only super good for you, it also (and more importantly) taste good! When you combine overnight oats, matcha and vanilla yoghurt you get a beautiful sweet/sour blend that hits just the right spot. So even if you’re not a big fan of matcha, the sweet and sour yoghurt will help you get your matcha in! At the end you have a lovely soft and chewy breakfast mixture ready to eat in just a sleep!

What is overnight oats?

If overnight oats is a new concept to you, or you just haven’t quite gotten into it yet, then the easiest way to describe this breakfast phenomenon, is that overnight oats are basically just making oatmeal in a no-cook overnight method. Instead of cooking your oats in the morning on a pot or in the microwave, you go ahead an soak the raw oats in your preferred in plant based milk. This method allows the oats to soak up all the liquid and soften the oats enough to eat them without getting cooked.

It is most common to prepare the overnight oats at night, but they don’t even need that long before they’re ready to eat. A couple of hours will do the trick, but since it is a breakfast recipe, it is called overnight-oats for that reason, since you usually wait overnight before having it for breakfast. The consistency comes out all soft like normal porridge would if you would have cooked them.

Even better, there are numerous health benefits to having overnight oats for breakfast, as they contain a lot of protein, fibre and nutrients that are perfect for breakfast as it will keep you from going hungry for hours and hours.

What do overnight oats taste like?

The beauty of overnight oats is that you can as creative as you like! Whether you like yours sweet, sour or spicy, there’ll be a version for you that you will like! But to get to the most obvious, if it didn’t taste good it wouldn’t be so popular! Overnight oats are bit different to the standard cooked version of porridge, but it is worth giving a try, as we definitely also had our hesitations before giving it a go, and look at where we are now! In our opinion, having overnight oats taste much better than porridge, as these ends up in a much creamier, soft, and tastier version. So we would definitely recommend you try it out!

Can you eat overnight oats warm?

The whole point of making overnight oats is the ease of making it! Meaning you won’t have to stand over the stove half-asleep making yourself breakfast. But with that being said, yes you absolutely can heat up the overnight oats if you didn’t find the cold version tempting. All you have to do is to put them in a heat-safe container and microwave it for a minute and add the toppings of your choice!

Instructions Vegan Matcha Overnight Oats

  1. Get a glass jar, and put three tablespoons of oats and two teaspoons of chia seeds into the jar.
  2. Next, boil some water from a kettle, add a teaspoon of matcha to a smaller bowl, add the hot water and stir until mixed thoroughly.
  3. Next, add the matcha mixture with oats and chia seeds to the jar. Add 125ml of your milk of choice and a bit of vanilla.
  4. Put the jar in the fridge overnight, and the following day top the overnight oats with some vanilla yoghurt and extra matcha on top and enjoy!

How To Store Any Leftovers From This Recipe

This breakfast recipe can easily last up to 5 days in the fridge! If you want to take it a step further and prepare your breakfast for the whole week, you can also make it in batches so you have breakfast for each day of your work week!
